One of Bristol’s breweries has expanded after the premiere of a moment in the city.
Wiper: True has already introduced two new Barrel Store beers, which it purchased in January before renewing the blocking period.
The first two beers produced at the Merstham Road warehouse, near the brewery’s main site in St Werburghs, are an Indian Pale Ale (IPA) and a seasonal edition, a classic Belgian style.
The inland and the narrow sea can now be purchased directly at the brewery, as well as at Bristol’s bottle department store starting next week.
Speaking about Barrel Store and new beers, brewery founder Michael Wiper said: “This is a new bankruptcy for Wiper and True.
“For many years, we have focused on refinement, creating drinking beers that everyone can enjoy.

“With these beers, we implemented this technique for combined fermentation; a great taste of niche brewing that only targets the real ‘beer fans’.
“The combined fermentation beers we have developed have delicious nuances and are full of subtle layers of flavors, but they are within everyone’s reach.”
Throughout the closure, the brewery has been brewed on its St. Werburghs site, as well as the creation of the Barrel Store, and the delivery of beer to the city’s citizens has allowed the company to thrive.
The adoption of a new one has given the team an area committed to exploring brewing with Brettanomyces – which means “British fungus” – and other more specialized beer production strategies, adding barrel aging.
Being in an absolutely separate warehouse means that brewers don’t have to worry about contamination by wild yeasts.
A few years of advertising allowed the brewery to invest in a committed brewing and packaging kit that provides additional protection against contamination.
Mr. Wiper added: “Entering the Barrel Store is a step for Wiper and True, which means our team can create fabulous new beers while still having space and resources at the original brewery to produce core beers like Kaleidoscope and Milk Shake, which helped us grow our business in Bristol.
“All this has been made imaginable thanks to the help of our hometown and we are very grateful for that.”
Brettanomyces is not discovered in giant breweries due to its wild and unpredictable nature.
If even a small amount enters a can line or a beer tank brewed with classic brewer’s yeast, this can lead to a lot of waste and create disorders for brewers.
The Barrel Store will only be used at first for brewing, but the team, however, must open it as an area where other people can have a few beers and attend tastings.
